Ascorbyl palmitate, also known as vitamin C palmitate or L-ascorbyl palmitate, is a fat soluble derivative of vitamin C. Its chemical name is 6-palmitoyl-L-ascorbic acid, and its chemical formula is C ₂ ₂ H ∝₈ O ₇. Its CAS number is CAS 137-66-6.
Physical properties
The appearance is a white to light yellow powder with a slight citrus aroma. The melting point range is between 107-118 ℃, and the density is about 1.2 g/cm ³. It is extremely insoluble in water and vegetable oil, but soluble in ethanol (about 1g/4.5ml).
Chemical properties
As an antioxidant, its stability is higher than that of vitamin C, it can withstand high temperatures and light, and is not easily decomposed by moisture. It can eliminate free radicals by providing hydrogen atoms and react with oxygen in the presence of metal ions to generate hydrogen peroxide and dehydroascorbic acid, thereby reducing oxidative damage.
Main purpose
Food industry: As a nutritional enhancer and antioxidant, it is widely used in infant formula, milk powder, edible oil, baked goods, etc. It can prevent oil spoilage and supplement vitamin C activity.
Cosmetics and pharmaceuticals: used in skincare products, medicinal ointments, and health supplements as an enhancer of vitamin E, with both antioxidant and color protection functions.
