The molecular formula of sorbitol is C6H14O6. [1] Sorbitol liquid is an aqueous solution containing 67%~73% D-sorbitol.
Sorbitol [1] Properties: D-sorbitol is a colorless needle-like crystal, or white crystal powder, odorless, cool and sweet, easily soluble in water, hardly soluble in organic solvents, it is acid-resistant and heat-resistant. Well, it is not easy to cause Maillard reaction with amino acids and proteins. D-sorbitol liquid is colorless, transparent and thick liquid. Depending on the crystallization conditions, the melting point varies from 88 to 102°C, and the relative density is about 1.49. Sorbitol liquid is a clear and colorless syrupy liquid with a sweet taste and neutral to litmus. It is miscible with water, glycerin and propylene glycol [2].
Sorbitol has sweet properties: D-sorbitol has a cool sweet taste, and its sweetness is about 50%-70% of sucrose. 1g of D-sorbitol produces 16.7kJ of calories in the human body. After eating, it will not be converted into glucose in the blood, nor will it be affected by insulin.
D-Sorbitol has good moisturizing properties, which can keep food to a certain degree of moisture, prevent drying, and also prevent sugar and salt from crystallizing. It can maintain the balance of sweetness, sourness and bitterness, and enhance the flavor of food. It is a non-volatile polyol, so it has the function of maintaining the aroma of food.

Sorbitol (CAS 50-70-4) is a sugar alcohol produced by reduction of glucose. The compound is a polyol found mainly in corn and fruits such as apples, prunes, peaches, and pears. Although produced for varying uses synthetically the D-Sorbitol has been observed to be produced by the bacterium Zymomonas mobilis from glucose with the use of glucose-fructose  oxidoreductase. Metabolism of D-Sorbitol has been found to generate superoxide anion radicals in mitochondria.

Insoluble in ether. Almost insoluble in most other inorganic solvents.
